Split is one of the living and breathing monuments both to how people lived in the past and to different styles and influences carved into its narrow streets, Roman temples and Christian churches. Outside the palace, the story of Split continues as it spreads from its center, the Palace, to beautiful vistas on the hill of Marjan, to the old town, waterfront promenade RIVA, and its beaches. Trogir is a small island town around 30 km from Split. In the past, the town was a bitter enemy of Split, with wars being waged for the land between the two famous cities. After the Trogir tour, enjoy wine and food pairing experience in Kaštela with one of the local families. You probably know all about the cultivar Crljenak-Zinfandel. DNA fingerprinting revealed that it is genetically equivalent to the “Primitivo” variety traditionally grown in Puglia (the "heel" of Italy), where it was introduced in the 18th century, as well as to the Croatian grapes “Crljenak Kaštelanski.” The grape found its way to the United States in the mid-19th century and became known by variations of the name "Zinfandel," a name of uncertain origin. Now you can visit the place where Zinfandel “was born.” Wine and food pairing takes place in a vineyard with magnificent views. The dishes are made of the freshest ingredients found at the market that day, and the menu shall be at the chef's inspiration. After the tour, the driver will take you back to Split. In the morning, you will meet your skipper, who will take you on a private speedboat excursion to the Blue Cave. Once there, you would get on an official visitor’s boat to enter the cave and witness the beautiful nature-provided light show. After exploring the blue cave, your skipper will take you to Komiža on the island of Vis for a coffee break and a stroll along the city promenade. After Komiza, another unique destination is Stiniva, a small pebble beach hidden in a cove, where you would get some time for swimming and enjoying the sun or to continue your maritime adventure in the Green Cave. Today, you will meet your guide for a half-day biking tour. The north side of Hvar island displays a mixture of natural, less visited spots and stunning beauties, and it is an ideal destination for an active holiday exploring away from crowds and noise. A guided mountain bike tour led by a native Hvar guide is a great way to connect with this area, which has been inhabited and cultivated for millennia, even before the Greeks from Paros island colonized the island. The tour touches on the charming Dalmatian towns of Stari Grad, Vrboska, and Jelsa, a few little villages, and as a special attraction, it goes through the UNESCO Stari Grad plain, also known as Ager or Hora. It is the largest field on the coast, and the land division into geometric parcels is still pretty much like when the ancient Greeks introduced crops some 24 centuries ago. The terrain is mostly flat, with just a few uphill/downhill sections. After a ride along the seashore to Jelsa, we will stop for a wine tasting with top-quality wine and olive oil. Today, after breakfast and checkout, you will embark on a public catamaran from Hvar to Split, where your driver will be waiting for you to take you to Dubrovnik for an afternoon of leisure. On your way there, you will visit an oyster farm as a part of a unique experience. Your host will be waiting for you in Hodilje, just 5 minutes away from the city of Ston by car. Once there, you will embark on a boat, taking you to the oyster and mussels farm in Malostonski Bay. You will see how the oysters are grown in a short demonstration by your host. After the farm, he will take you to a small, privately owned island in his family for generations. Here, you will get to taste the oysters from the farm accompanied with some local olive oil, wine, and rakija. To round the experience up, the host will prepare Buzara sauce for you. This sauce has been the base of local cuisine for centuries, a genuine comfort food of Dalmatia.
